Kadhi Pakora

Punjabi Kadhi Pakora Recipe
Ingredients for Pakora:
Gram flour (Besan) 1 cup
Onion chopped 1 medium sized
Coriander leaves chopped 1/4 cup
Red chilli powder 1 teaspoon
Turmeric powder 1/4 teaspoon
Cumin powder a pinch
Garam masala 1/4 teaspoon (optional)
Baking soda a pinch
Salt to taste
Water as required
Oil to fry
Preparation steps for Pakora:
Take a mixing bowl. Add chopped onions and then add besan to it and give a mix.
Now add spices and give a gentle mix.
Now add little by little water and keep stirring the batter. It should not be too runny not too thick. Simultaneously make sure no lumps to be formed into the batter.
Time to fry the Pakora - heat the oil on medium flame. Once the oil is hot, with the help of spoon mix the batter again and start dropping the batter into the hot oil.
Let it cook on one side till golden brown and then flip and cook the other side.
Make sure to cook on medium to low heat so that Pakoras are cooked from inside too.
Drain on paper towel and keep aside.
Ingredients for Kadhi:
Yoghurt (curd) 1 cup
Gram flour (Besan) 1/4 cup
Water 3 cups
Turmeric powder 1/2 teaspoon
Red chilli powder 1/2 teaspoon
Coriander powder 1/2 teaspoon
Cumin powder 1/2 teaspoon
Salt to taste
Preparation:
Take a mixing bowl, add yoghurt, then add water whisk generously.
Now add besan and whisk until both are well combined.
Add spices and whisk and make it lump free mixture. Keep aside the prepared Kadhi mixture.
Tempering the Kadhi
Ingredients:
Oil 3 tbsp
Cumin seeds 1 teaspoon
Mustard seeds 1 teaspoon
Hing 1/2 teaspoon
Green chilli paste 1 teaspoon
Ginger paste 1/4 teaspoon
Curry leaves few
Preparation:
Take a deep and large pan or kadai, add oil then add mustard seeds and cumin seeds. Let them splutter then add hing, green chilli paste and ginger paste and stir for 1 minute, later add curry leaves.
Add prepared besan and yoghurt mixture into the pan, now stir continuously on medium and high heat until Kadhi comes to a boil.
Cook the Kadhi for about 20 minutes and keep stirring it in between.
After 30 minutes Kadhi would have considerably thickened and completely cooked. You can add little water if it looks too thick.
Add the prepared Pakoras to the Kadhi and transfer it into serving bowl.
Pakora Kadhi is ready to serve with rice or roti.
