Gujarati Kadhi is undoubtedly one of the best recipes of Gujarati cuisine. It is a sweet and sour yogurt soup best enjoyed with rice or khichdi. Gujarati Kadhi is different from Punjabi Kadhi. Gujarati Kadhi makes use of less Besan and has a thinner consistency. Punjabi Kadhi uses more Besan and is thick in consistency. Both the versions are delicious. How to make Gujarati style Kadhi at home?

The authentic Gujarati recipe needs knowledge of cooking with Indian spices. Gujarati Kadhi gets its taste from curd, Besan and spices. But today I am posting a simpler version of Gujarati Kadhi recipe that will make use of some basic ingredients. If you are still wondering how to make Gujarati style Kadhi at home, leave your worries aside. I have provided step by step recipe and a video for your reference.

Gujarati Kadhi Recipe

Ingredients:

Curd 1/2 cup

Besan 1/4 cup

Green chilli paste 1 teaspoon

Sugar 1/2 tablespoon

Salt to taste

Mustard seeds 1/3 teaspoon

Cumin seeds 1/3 teaspoon

Few curry leaves

Oil 1/2 tablespoon

Coriander leaves

Preparation:

Take a bowl, add curd. Add water at regularly intervals, keep churning and make buttermilk (it shouldn't be too thick or too thin in consistency). Then add besan and whisk until its dissolved completely. There should not be any lumps in it.

Now add green chilli paste, sugar and salt. Gently mix it.

Now I have used the same bowl on gas stove. You can transfer the mixture into another bowl which you can put on the gas stove. Stir the buttermilk mixture for few seconds on medium heat.

Heat another small wok and add oil. Then add mustard seeds and cumin seeds to the same oil. Wait for a few seconds until it crackles, then add curry leaves.

Add this hot oil into the buttermilk mixture, be careful while doing this as its very hot. It will splutter slowly.

Switch off the gas, add coriander leaves to the prepared kadhi.

Ready to serve - my style Gujarati Kadhi. You can have this kadhi with Veg Pulao or Matar Pulao.
